Cottage Cheese Casserole

Ingredients:

500 grams 2% cottage cheese
4 eggs
3 cups spinach
40 grams sharp cheddar
cheese
Pepper
Garlic powder (to taste)
Cayenne (to taste)
1 tsp. butter

Instructions

  1. Preheat oven to 350 degrees F
  2. Steam spinach. Drain spinach and use a paper towel to squeeze out excess water. This will prevent your casserole from being runny. You can also use frozen spinach but you’ll need to cook it and squeeze it out as well.
  3. Mix together, cottage cheese, spinach, eggs and garlic powder, pepper and cayenne to your own taste.
  4. Shred the cheese
  5. Grease an 8 inch square baking dish with butter.
  6. Fill the baking dish with cottage cheese and egg mixture.
  7. Top with shredded cheese
  8. 8. Bake for about 30+ minutes or until golden brown and bubbling and the center is solid and not runny. I normally shake hold the corner of the tray and lightly shake it. If the center is still wiggly, the center hasn’t cooked through.

The baking time will depend on how deep your dish is. In the past I have doubled this recipe but it has taken about 1 hours and 20 minutes to bake.

This is from when I doubled the recipe. I personally recommend using two separate baking trays if you want to double the recipe.

Preventing the top from burning. If you notice the top is getting too brown or is at risk for burning, lay a piece of aluminium foil on top.

    I was wondering how you calculated the calories because if I put these in MFP I get a higher outcome even if I make it 4 servings?

    Hi Tatiana! The recipe will vary depending on the cottage cheese % and brand you use as well as the cheese brand and fat %. I don’t bother sharing specific brands because sometimes they are local Vancouver brands that you can’t buy in other places of North America or the world. Hope that clarifies things =)
