When it comes to meal prepping I’m all about speed and practicality! This is why I LOVE baking my sweet potatoes.
Vitali knows just how much i’ve struggled with cooking potatoes all the way through. I’ve gotten a lot of, “These are raw, Nikki.” “Are these suppose to be crunchy or are they not cooked?” hahah! For real, my potato game isn’t great.
So, these are my full proof way to prep potatoes. I find it also releases the natural sweetness of sweet potates.
- Wash your potato
- With a fork, poke holes. I generally poke each potato about 5-6 times all the way around. Careful not to hurt yourself! I don’t recommend doing this while holding the potato in the palm of your hand. It’s better to have the potato on a cutting board
- Lay your potato in foil
- Wrap all your potatoes in foil
- Put them all on a baking tray
- Bake @ 400 F for 50-55 minutes or until you can poke a fork into one of the potatoes with ease
I use these potatoes for:
- smoothies
- sweet treats (peel the skin, mash the potato, top with nut butter and cinnamon
- for breakfast with eggs, you can peel them, cut them up and pan fry them
- as sides to my lunch and dinner
- quick pre-workout meal when I train in the afternoon or evening
