Chicken Burrito Bowl

Ingredients:
Olive oil spray
2 cloves garlic, minced
1 package taco seasoning
500 grams ground chicken breast
2 cups onions, chopped
4 bell peppers, sliced
3 cups cherry tomatoes, halved
1 bag of greens or spinach
1-2 jalapenos, minced
520 grams cooked brown rice
cheese if desired, shredded

Instructions:

  1. In a small pot cook the brown rice.
  2. Spray a large pan with olive oil. Add the garlic and saute until browned. Add in the ground chicken and cook. When almost cooked add in your taco seasoning spices.
  3. Spray a second pan with olive oil and saute the onions and bell peppers
  4. Measure out 120 grams ground chicken breast, 1 cup roasted bell peppers, 1/2 cup roasted onions, 6 fresh cherry tomatoes, 130 grams cooked brown rice.
  5. Add grated cheese or fresh avocado if desired.
