Ingredients:
1 cup egg whites
3/4 cup 0% plain Greek yogurt
3 scoops vanilla allmax protein powder
3 tsp. ground coffee
1 1/4 tsp. baking powder
1 Tbsp. Truvia/Stevia
1 tsp. cocoa powder
50g gluten free quick oats
Coconut oil cooking spray (like Trader Joe’s coconut spray)
Steps:
1. Preheat oven to 350 degrees F.
2. Blend/grind oatmeal into flour like consistency
3. Mix all ingredients together with a fork or a whisk
4. Spray muffin tins with 0 calories cooking spray (I used Trader Joe’s coconut spray)
5. Bake at 350 for 10 minutes then reduce the heat to 340 for the remaining 10-13 minutes in the middle rack or until a toothpick comes out clean.
