Ingredients:
1. 8 Zuchinnis
2. 8 tbsp parmesan cheese (1 tbsp per meal)
3. 80 cherry tomatoes (10 per meal)
4. 240 grams pesto (3o grams per meal)
5. 96 asparagus spear (12 per meal)
6. 640 grams of shrimp
7. 2 tbsp diced garlic
8. olive oil spray
9. lemon wedges
Steps:
- use a spiralizer to cut zuchinnis into noodles.
- weigh out about 200 grams per meal
- cut cherry tomatoes in half (add to noodles)
- measure out pesto and add to noodles
- add 1 tbsp of parmesan to each meal
- cook shrimp with light olive oil, garlic (and white wine if you want..yum!) season with lemon..to your liking
- weigh shrimp and store separately
- lightly spray asparagus with olive oil and bake for 25 minutes at 350 F
When it is time to eat, I dump the container with zucchni noodles, pesto, cheese and tomatoes into a pan and cook it all together for about 3-4 minutes. Then add in shrimp and cook till warm. Eat asparagus on the side.
