Prep time: 10 minutes (or more depending on the size of your food processor)
Cook time: 15 minutes
Yields: approximately 8 servings
Ingredients:
1 1/2 bags of cauliflower (2 heads of cauliflower) to make the cauliflower rice
2 peppers
1 large onion
3 cloves of garlic
1 tbsp finely cut ginger
1 bag of frozen peas and carrots (probably 4-5 cups)
1/4 cup low sodium soya sauce
2 eggs
1. Follow this recipe to make cauliflower rice.
2. Dice the onions and ginger. Use a garlic press to press the garlic. Cut the peppers into bite size pieces.
3. Sautee the garlic, onions and ginger for about 3 minutes.
4. In a cup, beat together the 2 eggs and throw into the pot. Mix until cooked.
5. Add in the peppers and cook for another 5 minutes
6. Add the cooked cauliflower rice
7. Add the frozen peas and carrots and mix all the ingredients together
8. Cook for about 10 minutes uncovered or until the peas and carrots are warmed all the way through
If you want, you can also add cup up meat or shrimps into step 3.
